Spelt is a cereal suitable for every season. Its plant belongs to the family of graminaceous and can reach 170 cm in height. Its history is very old, it was used in Mesopotamia, in ancient Egypt and in Palestine. Its slighly sweet and nutty grain survived for many years as a relict crop in Central Europe and northern Spain before making a comeback as a health food. Thanks to leek, the dish has a strong, intense taste: the delicacy and sweetness of the carrots balance everything.
